This little brake hose tool from AliExpress is fantastic.

When setting up hydraulic brakes, it cuts the brake hose cleanly, and allows you to easily drive the barb into the end.

It only cost me £9, and the build quality is surprisingly good. It’s a full aluminium construction, and even the small blade is replaceable. Once again AliExpress comes in very handy!
