Langue de chat turned into Shiroi Koibito Biscuits | ASMR Silent Recipe



Langue de chat is a thin, crisp and buttery biscuit. Traditionally, it has a long ovular shape, resembling a cat’s tongue (hence its name). In this recipe, I will teach you how to make langue de chat and easily turn them into Shiroi Koibito cookies!
If you’ve been to Japan, you’ve probably brought some back as a souvenir. Shiroi Koibito is a famous and popular Japanese cookie. Once you know how to make langue de chat, Shiroi Koibito is easy to make! Shiroi Koibito features the crisp butter biscuits but adds a white chocolate filling to them, making it even more decadent and sweet.

this recipe makes 33 biscuits that are 4cm x 4xm (1.5 inch x 1.5 inch)

Instructions:
1. Preheat the oven to 320F (160C)
2. Cream the butter and sugar until it’s light and fluffy
3. Add 1/2 of the egg white and the vanilla. Mix until it’s incorporated
4. Add the remaining egg white and mix again
5. Add flour, salt and corn starch. Mix until it’s incorporated.
6. Transfer the batter to a piping bag (this makes it easier but you can skip this and use a spoon instead).
7. Take a baking sheet and line it with a silicon mat or parchment paper. Fill in each square then using a bench scraper, smoothen out the batter and remove any excess. It will take about 3-4 sweeps to get it smooth. Place the excess batter back into the piping bag to be reused.
TIP: while I used parchment paper in the video, a silicon mat is better because it’s less likely to move. This results in a smoother cookie.
8. Repeat the process until there’s no more batter.
9. Bake the cookies for 9-10 mins (or 12 mins if you’re using a light coloured baking sheet).
10. Let the cookies cool on the pan then enjoy as it is or continue to make a white chocolate filling. When the cookies are cooled, they should be crisp and buttery. If you find the cookies don’t quite snap or miss that buttery flavour, you may need to place the cookies back in the oven for 1-2 mins.

White chocolate filling:
1. Melt white chocolate
2. Line a baking sheet with parchment or a silicon mat. Place the mold on top then fill in each square with melted chocolate
3. Use the bench scraper to smoothen out the chocolate
4. Stick the pan in the freezer for 5-10 minutes then carefully remove the chocolate squares from the mold
5. To assemble: place a dab of melted chocolate on a cookie then place the chocolate square on top. (the dab of chocolate will help the cookie stick to the chocolate square). Place another dab of melted chocolate then place a cookie on top to create a sandwich.
